roasted salmon and spinach linguine
ingredients:
1 lb of salmon
Savor Spice Co. spicy garlic and herb salt or other season-all of choice
1/2 lb (8oz) of linguine
2 tbsps of butter or olive oil, more if desired
4 cups of baby spinach
1/4 cup of parmesan cheese, more for topping if desired
1 lemon, sliced into wedges
supplies:
sheet pan lined with aluminum foil
large pot
non-stick skillet
directions:
preheat your oven to 300. lay the salmon on the lined sheet pan and season generously with the spicy garlic and herb salt, or other season-all/seasoning of choice. bake the salmon for 25-30 minutes or until cooked through. once cooked, remove from the oven and flake with a fork. set aside.
while the salmon cooks, cook the linguine according to the package. salt the water generously before adding the pasta. once the pasta is cooked, drain it and save about 1/2 cup of the pasta water. set aside.
once the salmon and linguine are cooked, cook the spinach. in a non-stick pan, add 1 tbsp of butter or olive oil over medium high heat. once melted, add in the spinach and season generously with the spicy garlic and herb salt or other seasoning of choice. once wilted, add the salmon and linguine into the skillet and mix. add in the remaining butter or olive oil (more if desired), and about 1/4 cup of the reserved pasta water. stir everything together well. check for additional seasonings.
remove the pasta from the heat and mix in the parmesan cheese. serve with lemon wedges, and squeeze the lemon over the pasta before eating.
