lemon garlic zoodles and shrimp
Ingredients:
Medium sized shrimp, 8-10 per serving
Zucchini noodles, about 1 cup per serving
Garlic, minced
Fresh lemon juice
Salt and pepper
Olive oil
Red pepper flakes, optional
Parmesan cheese, optional
Directions:
Drizzle olive oil in a pan over medium heat. Add garlic, about 1/2 tbsp per serving, and let cook in oil for about 1 minute. Add shrimp, and season with salt and pepper to taste. When the shrimp is almost cooked, add the zucchini noodles, lemon juice (amount of juice will vary depending how lemon-y you want the dish - I used the juice of 1/2 lemon for 1 serving), and more salt and pepper, if necessary. Cook noodles to your preference - I cooked mine for about 3 minutes. Top with parmesan cheese and red pepper flakes (optional). Enjoy!
*Note: Zucchini noodles came be cooked many different ways - boiled, microwaved, mixed in warm sauces, etc. This recipe can be modified for however you'd like to cook your noodles.
