stuffed bell peppers

Ingredients:

4-6 bell peppers, cut in half on the longer side (as seen in pic)

1lb of ground turkey

1 bag of frozen corn, steamed according to package 

1 can of black beans, rinsed and drained

1-2 tomatoes, chopped

1/2 small onion, chopped

1 tbsp of garlic

2 cups of shredded cheese

Olive oil 

Salt and pepper

other seasonings of your choice

Directions:

Preheat your oven to 400. On the stove over medium heat, cook the ground turkey. Once cooked, drained and set aside. In the same pan, drizzle in a little olive oil and add onion and garlic. Cook together for about 2 minutes, then add corn, black beans, tomatoes, and the ground turkey back to the pan. Season with salt, pepper, and any other additional seasonings you’d like. Turn off the heat for the filling and add about 1/2 cup to 1 cup of shredded cheese to the mix and stir. In a baking dish, lay the sliced bell peppers down and fill with the ground turkey filling. Top with more cheese, if desired. Pour about 1/2-1 cups of water into the baking dish - just enough that it covers the bottom - and cover with foil. The water will help the peppers steam and soften while baking. Bake the stuffed peppers for 20 minutes, then remove the foil and bake for an additional 10 minutes. Enjoy!

*note: you can use any vegetables or meat you want when stuffing the peppers. many recipes will include rice or quinoa in the mix as well. i omitted that as i’m watching my carbs. 

*additional notes: if you want a tex-mex flair, you can use a taco seasoning packet to season the filling. the options are endless! also, you can cut the tops off the peppers and stuff them standing up versus laying down. up to you!
