steelhead w/ basil gremolata
*this dish is anti-inflammatory*
ingredients:
fish:
1.5lbs of steelhead or salmon, cut into 4-5 filets
1tbsp of olive oil
juice of 1 lemon
salt and pepper, to taste
basil gremolata:
1 bunch of basil
1tbsp of garlic (chopped or paste)
zest and juice of 1 lemon
optional for serving:
mixed greens
lemon olive oil dressing (2 tbsps of extra virgin olive oil + juice of 1/2 lemon + salt/pepper to taste)
sliced cucumbers
roasted asparagus
supplies:
baking dish
food processor or blender
serving plate
directions:
preheat the oven to 400. add the fish to a baking dish and drizzle with olive oil and lemon juice. season the fish to taste with salt and pepper. bake in the oven for about 15 minutes or until the fish is cooked through.
while the fish cooks, make the basil gremolata. in a food processor or blender, blend all the ingredients until smooth.
to serve, top some mixed greens with lemon olive oil dressing, sliced cucumbers, and roasted asparagus. top with the baked fish and a tbsp of the basil gremolata sauce. enjoy!
