grilled chicken w/ mint sauce
ingredients:
chicken:
3-4 chicken breasts cut into strips
1/4 extra virgin olive oil
juice of 1 lemon
1/8 tsp of ground turmeric
2 fresh mint sprigs
salt and pepper, to taste
mint sauce:
1 bunch of fresh mint
1/2 cup of extra virgin olive oil
1tbsp of garlic paste or 1 garlic clove
2 tsps of lemon zest (about 1/2 a lemon)
salt and pepper, to taste
supplies:
large resealable bag
grill pan
side plate
food processor or blender
directions:
in a large resealable bag, combine the chicken, EVOO, lemon juice, turmeric, mint, salt, and pepper. make sure all the chicken is coated, and refrigerate for 30 minutes or overnight.
when ready to cook, heat a grill pan over medium high heat on the stove. grill the chicken strips until cooked through, about 5-6 minutes per side. rest the chicken on a side plate for a couple minutes before serving.
to make the mint sauce, combine all the ingredients in a food processor or blender until smooth.
to serve, add brown rice, mashed or riced cauliflower, or vegetables with the chicken. dip the chicken in the mint sauce or serve poured over (as pictured). enjoy!
