maple bacon biscuits

makes 6-8 biscuits

ingredients:

8 slices of bacon

1-3/4 cups of self rising flour

1 tbsp of maple sugar or regular sugar

1/2 cup (1 stick) of cold butter, cut into pieces

3 tbsps of maple syrup

1/2 cup of buttermilk, cold

1 egg, for brushing

1/2 tbsp of cream or milk, for brushing

supplies: 

Food processor 

Bowl

spatula

biscuit cutter

parchment paper 

sheet pan 

pastry brush

Directions:

Cook bacon using your desired method until cooked through but not crispy. Once cooked, drain on a paper towel until cooled. Chop and set aside.

pour the flour, sugar, and butter in a food processor & pulse until combined. Pour the mixture into a bowl and stir in the bacon pieces. Mix the maple syrup and buttermilk together in a bowl, and then add to the flour/bacon mix, stirring until just combined. If it doesn’t seem like its coming together, add more buttermilk, 1 tbsp at a time.

Move the dough to a lightly floured surface, and gently press down into a square, about 1–inch thick. Cut the biscuits using a biscuit cutter, re-rolling the scraps to make additional biscuits. Place the biscuits on a parchment–lined sheet pan, about 2 inches apart. Put the pan with the biscuits in the freezer until the biscuits have chilled, about 10 minutes.

preheat the oven to 350. While the biscuits are chilling, prepare the egg wash by whisking together the egg and cream/milk. Once the biscuits are chilled, remove from the freezer and lightly brush with the egg wash. Bake the biscuits until cooked through and golden on top, about 30 minutes. Serve warm. 

note: if you don’t have a food processor, you can use a pastry blender or forks to blend your butter with the flour mixture.
