berries ‘n cream waffles
*this recipe yields 3 waffles
ingredients:
1 cup of all purpose flour
2 tbsp of sugar
1 tbsp of warm spice mix (available for purchase from me)
2 tsp of baking powder
1/2 tsp of salt
1 egg
3/4 cup of warm milk
3 tbsp of unsalted butter, melted
1/2 tsp of vanilla extract
1/4 cup of fresh blueberries
1/4 cup of fresh strawberries, chopped
1/2 cup of heavy whipping cream
maple syrup, optional
non-stick spray
waffle maker
directions:
preheat your waffle maker. in a bowl, mix the flour, sugar, warm spice mix, baking powder, and salt together well. add in the egg, milk, melted butter, and vanilla. whisk the batter until incorporated. spray your waffle maker slightly with non stick spray, and pour 1/3 of the batter in (this recipe makes 3 waffles). cook until golden brown. repeat until all the waffles are made. while the waffles cook, whip the heavy whipping cream until it reaches your desired consistency. set aside in the fridge until ready to eat. serve the waffles immediately from the waffle maker. topped with berries, whipped cream, and syrup (optional). enjoy!
*note: if you don’t have the warm spice mix, you can substitute it for cinnamon. also, this recipe can easily be doubled or tripled to feed more people. too keep the waffles warm while cooking, set your oven to 250 oven and lay the waffles in a flat layer to keep warm and crispy. any left over waffles can be frozen and re-heated.
