danish butter cookies
ingredients:
1 cup (2 sticks) unsalted butter, room temperature
1/2 cup of granulated white sugar
1/4 tsp of salt
1-1/2tsp of pure vanilla extract
1 egg
2 cups of all-purpose flour
additional granulated white sugar, for sprinkling
supplies:
stand or hand mixer
cookie sheet lined with parchment
piping bag with a star tip
directions:
preheat your oven to 350 degrees and line sheet pans with parchment paper (i used 2 sheet pans).
in a mixer, beat the butter and sugar on medium speed until combined and fluffy, ~ 2 mins. add the salt, vanilla and egg, and beat until combined, ~1 min. reduce the mixer speed to low and carefully add the flour in 1/2 cup increments until combined. the dough should be thick.
transfer the dough to a piping bag fitted with a large star tip. pipe the dough into circles on the parchment paper, then sprinkle with the additional sugar.
bake each sheet pan one at a time, until light golden brown, ~15mins. let the cookies cool completely before serving.
