queso blanco con chorizo
ingredients:
chorizo:
1 tbsp of olive oil
1/2 white onion, chopped fine
1/2 jalapeño, chopped fine
6oz of chorizo, out of the casing
cumin, to taste
salt and pepper, to taste
Cholua hot sauce, to taste, optional
queso:
1 tbsp of butter
1/2 jalapeño, chopped fine
1/2 tbsp of flour
3/4 cup of heavy cream
4 oz of white American cheese
4 oz of monterey jack or pepper jack cheese
cumin, to taste
salt and pepper, to taste
additional seasonings, to taste

directions:
Heat a olive oil in a skillet over medium-high heat. Once hot, add onion, jalapeño, and chorizo to the pan. Saute everything together, breaking up the clumps of chorizo. Season to taste with cumin, salt, and pepper. Add in hot sauce, if desired for more heat. Mix well, and continue to cook until the chorizo is cooked to your liking. Total time for the chorizo in the picture is about 10 minutes. Once cooked, remove from heat and keep warm until the queso is finished.
to make the queso, start by heating butter over medium heat in a heavy bottom-pan. once hot, add in the jalapeño and cook until softened. Next, add in the flour and combine well. add in the heavy cream, stirring constantly. once heated through, add the cheese to the pot, continuing to stir.. season with cumin, salt, and pepper to taste. add additional seasonings as desired. once the queso is smooth, remove from heat and top with chorizo to serve.
