southern style green beans
ingredients:
5 slices of bacon, chopped
1/2 yellow onion, chopped
32oz (2lb) bag of fresh green beans
3 cups of chicken stock
garlic powder, to taste
salt and pepper, to taste
red pepper flakes, to taste

stock pot with a lid
directions:
in the bottom of your stock pot, cook bacon over medium heat. once cooked and crispy, remove the bacon, leaving the fat/drippings and add the onions to the stock pot. cook the onions for 2-3 minutes, then add green beans, chicken stock, and enough water to cover the green beans. season to taste with garlic powder, salt, pepper and red pepper flakes, and turn the heat up to medium high to bring the green beans to a boil. once boiling, lower the heat to low and simmer the green beans with the lid on for about 3 hrs, or until beans are super tender and soft. once cooked, strain beans and onions, most of the liquid in the pot, and mixed with bacon. serve warm.
note: to make the green beans in your crockpot: cook the bacon and onions as directed, then add the onions and bacon fat (not the bacon) along with the green beans and seasonings to your crockpot and cook on low for 7-8 hours. once the green beans are soft and tender, strain and mix with the bacon.
