spicy maple chicken
adapted from HelloFresh’s recipe
ingredients:
4 chicken breasts, no more than 1.5 inches thick
2 tbsp of sour cream
1 cup of panko breadcrumbs
2 tbsps of blackening seasoning, cajun seasoning, or a seasoning mix of your choice
1/4 cup + 2 tbsps of olive oil
salt and pepper, to taste
1/4 cup of pure maple syrup
1/2 tsp of chili flakes

2 small bowls
directions:
preheat your oven to 425. drizzle about 2 tbsps of olive oil over the sheet pan. season the chicken breasts with salt and pepper (to taste) on both sides, and lay on the sheet pan. smooth about 1/2 tbsp of sour cream over the top of each chicken breast. in a bowl, mix the panko breadcrumbs, seasoning, 1/4 cup of olive oil, and salt and pepper, if desired. spoon generous amounts of the breadcrumb mix over each piece of chicken and press into the chicken, covering the top/sour cream. bake in the oven for 20-25 minutes, or until the chicken is cooked through.
while the chicken cooks, mix up the maple syrup and chili flakes in a bowl. once the chicken is cooked, let it cool for a couple minutes before serving. serve with the spicy maple syrup drizzled over the chicken. enjoy!
