sweet potato hash
Ingredients:
1 bag of market pantry steam in a bag roasted sweet potatoes (found at target; see note for other options)
6 slices of bacon, chopped
1/2 large white onion, chopped
2 green peppers, chopped
3-4 eggs, optional
Salt and pepper
Garlic powder
olive oil, optional
Directions:
In a large skillet, cook the bacon over medium heat. Once cooked, remove from the pan and drain on a paper towel. Do not remove the bacon fat from the pan. In the same pan, add onion and green peppers. add additional olive oil, if necessary. Cook together for about a minute, then add sweet potatoes. Season with salt, pepper, and garlic powder, and cook on the stove, stirring occasionally, for about 8 minutes, or until your desired texture is achieved for the potatoes. If you’d like to serve with a fried egg, as pictured, when the potatoes are almost done, cook the fried egg in a separate frying pan. When the potatoes are finished, add the bacon back to the skillet and stir. Serve warm with the fried egg on top. This will yield about 3-4 servings, with 1 egg per serving. Enjoy!
*note: instead of using the market pantry roasted sweet potatoes from target, you can use fresh sweet potatoes. cut them into chunks, and cook in boiling water for about 5 minutes before adding to the skillet. also, you can use whatever meat you’d like; this would be great with chicken!
