apple butter pancakes
ingredients:
1 cup of flour
1-1/2 tsps of baking powder
1-1/2 tbsps of white sugar
pinch of salt
1/2 tsp of vanilla extract
3 tbsps of apple butter
2 tbsps of butter, melted, additional for cooking
1 cup of milk
1 egg
supplies:
mixing bowl and spoon
griddle or large skillet
directions:
in a bowl, mix all the dry ingredients. in another bowl, mix the wet ingredients. combine the wet ingredients with the dry ingredients, mixing well. heat a non-stick pan or griddle to medium heat. when the pan is hot, add about 1/2 tbsp of butter and let it melt. once melted, make the pancakes, using a little less than 1/4 cup of batter per pancake. add butter as needed to the pan as the pancakes cook. pancakes are ready to flip when bubbles appear on the top in the batter - if the pan or griddle is properly heated, it should take about 90 seconds. repeat until all the batter is gone. serve warm with additional apple butter and pure maple syrup, if desired.
